Smoked Salmon Caesar Kale Salad

The only real recipe piece that takes time here besides throwing items into a bowl is the caesar dressing. For those of you that follow me on Instagram... well it's no larger secret. Thats the recipe! 

Serves: 2-3
Prep time: 5-8min

Cook Time: None... just plate :) 

Mise En Place: 

  • Smoked Steelhead Salmon (or smoked salmon of choice) , chopped in thin chunks

  • 1/2 cup Parmesan cheese, Grated

  • Kale, chopped

Dressing: 

  • 1 clove garlic, minced

  • 3/4 cups greek yogurt

  • 2 tbsp lemon juice (Fresh!!) 

  • 1 tbps olive oil

  • 1 tsp dried oregano

  • 1 tbsp dijon mustard

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1 tsp worcester sauce

  • 1 tsp anchovy paste (optional)

  • 1/4 cup roasted walnuts (optional)


How To Make: 

1. Add walnuts to an oven sheet with olive oil and roast at 350* for about 10 minutes until browning. remove and Chop.

2. Add all dressing ingredients in a food processor or blender to create a saucy texture

3. Add Kale to a bowl with walnuts and mix in the dressing

4. Plate and add smoked salmon on top with shredded parmesan cheese

5. ENJOY!
