Shrimp Paella

Exceeding Expectations

This recipe is one of my favourite go-to quick and easy meals to make. With the spicy flavours of turmeric and paprika mixed with the juicy shrimp crunch, it's an easy crowd pleaser or potluck addition! The cooking technique is very similar to a risotto!

Serves: 3-4

Prep Time: 5min

Cook Time: 25-30min

Mise En Place:

​

  • 1 White onion, Chopped

  • 2 cloves garlic, Minced

  • 4 tbsp Tomato Paste

  • 1 Tbsp Turmeric

  • 1 Tbsp smoked Paprika

  • 3 cups of mushroom or vegetable stock

  • 1.5 cups arborio rice

  • 1 cup of raw, peeled and deveined shrimp or seafood of choice

  • salt

  • 1/3 cup red wine (optional)

  • 1/8 cup of finely chopped parsley (optional)

  • 1/4 cup red or yellow bell pepper (optional)

How To Make: 

​

1. Heat Stock in a side pot. Sautee onions in a hot skillet until translucent, add Garlic. Optional to add bell pepper and sautee until fragrant.

​

2. Add tomato paste, Turmeric, Paprika, Salt to taste

​

3. Add rice and toast in skillet for 2-4 minutes until it is starting to turn golden brown. At this point, you can choose to deglaze the rice with red wine.

4. Add stock one spoonful at a time (let the stock absorbs into the rice, and then circle stir to let out all the gluten). Repeat until stock is complete and rice is tender (if you run out of stock use water as the last spoonful). Taste, and add extra salt/pepper if you choose.

5. Add shrimp/seafood  one piece at a time spread out an inch apart from the outside of the pan to the inside submerging each piece into the rice

6. Cook for 1-2 minutes on low-medium until seafood is cooked

​

7. Remove lid and top with chopped parsley to serve! (parsley is optional)
