Roasted Bay Leaf Cod and Potatoes

This dish is a staple European influenced homestyle meal that is light, yet filling in all the right ways! The best thing about it... its so easy to cook with little to no mess in the kitchen

Serves: 3-4

          Mise En Place: 

  • 4 Carrots Shaved

  • 4 Potatoes (Gold Yukon) Shaved and sliced into discs

  • 2 shallots 

  • 1/4 leek (Optional)

  • 1-2 Cod Fillets (Atlantic or Iceland) Chopped in large chunks (as seen in photo)

  • 3 Garlic Cloves whole

  • 5 medium sized Bay Leaves

  • 1 stalk of Thyme

  • Salt+Pepper

  • Dried Oregano

  • 1/2 Cup Cream

  • 3-4 Tbsp Butter

  • Olive Oil

  • Stock (optional)

How To Make: 

1. Preheat the oven to 425*.Line an oiled oven dish with the potato discs to fully cover the bottom

2. Season with salt, pepper, dried oregano and top with butter, oil, cream, bay leaves, thyme stalk and Carrots , Shallots and leeks (optional). Cover with lid or tin foil! **

3. Roast in the oven for 20 minutes (stir in between making sure potatoes are cooked evenly) -- if its too dry at this point and there isn't enough liquid base, add stock

4. Add the chunked cod fillet (submerge in developed liquid) and cook for another 10-15 minutes

5. Serve and enjoy!
