Oaxaca Fresh Bowl (Inspired by Freshii)
This recipe is very versatile and provides all types of raw ingredients enriched in a tex-mex sauce! I've replicated the widely known bowl from Freshii and made it at home with my own ingredients!

Mise En Place:
-
1/4 block of extra firm tofu
-
2 tbsp corn starch
-
olive oil
-
1/4 cup chopped tomato
-
1/4 cup chopped peppers
-
1/4 cup kale
-
1/4 cup avocado, sliced
-
1/4 cup black beans
-
1/8 cup shredded beets (optional)
-
1 cup cooked rice or any grain (ideas: bulgur, brown rice, quinoa)

Sauce:
-
1/2 cup greek yogurt (plain)
-
1/4 cup BBQ sauce
-
1 clove garlic
-
1 dash salt
-
2 tsp lime juice
-
1 tsp cumin
-
1tsp chili powder
-
1 tsp siracha hot sauce

**NOTE: you can choose your own base.. if you want kale, rice, noodles, etc**

How To Make:

Heat oil in a medium skillet. Add black beans and peppers to sautee.

In a large bowl, combine tofu slices and corn starch. Shake until fully coated.

Remove black beans and peppers from skillet into a side bowl. Add tofu slices and cook on each side until golden brown. Season with salt, pepper.

Add cooked rice, kale, black beans, peppers, kale, avocado and tofu to a serving bowl

Mix all sauce ingredients into a food processor or blender. Blend until creamy. Add olive oil to loosen the sauce if needed.

Top bowl with sauce.
