Lemongrass Thai Soup

Spice up your life!

If you like spicy, this recipe is for you! This soup is the easiest and most flavourful soup that you could possibly make cooking in less than 15 minutes!

Serves: 2-3

Prep Time: 5min

Cook Time: 10min

​

Mise En Place: 

​

  • 1/2 julienned red onion

  • 1/2 julienned red bell pepper

  • 3 sliced mushrooms

  • 2 stocks of lemongrass 

  • 2 cloves of garlic, finely chopped

  • 1/2-inch piece of ginger root peeled and finely chopped

  • 2 Thai chili peppers, finely chopped*

  • 2 cups mushroom broth or vegetable broth

  • 1 tbsp brown sugar

  • 1 cup firm tofu cubed 

  • 1 tbsp soy sauce

  • 1 tbsp lime juice

How To Make: 

​

  1. Place all the veggies (onion, red bell pepper, mushrooms, garlic, ginger, lemongrass and Thai chilis), broth, and sugar in a large pot.

  2. Bring it to a boil and then cook over medium heat for about 5 minutes.

  3. Add the tofu and cook for 5 minutes more.

  4. Remove from the heat, add the soy sauce, lime juice

  5. Keep the soup in a sealed container in the fridge for up to 5 days. You can also freeze it!
