Hand-pulled Chinese Style Noodles

These hand-pulled noodles are spectacular in so many ways! They contain a nice bite to them with a simple taste that is enhanced by a soy, chinkiang vinegar, and chilli crisps.

Mise En Place:
​
2 Cups of all purpose flour
2 tsp salt (preferably sea salt)
3/4 cup of warm water
1tbs peanut or vegetable oil
Sauce:
1/2 cup of peanut of vegetable oil
1 tsp dried chillies
2 tbsp toasted sesame seeds
2 tsp black vinegar
2 tsp soy sauce

How To Make:

Noodle Dough:
1. Mix flour and salt together in a medium bowl and stir the water in to form a soft dough
2. Turn the dough out onto a flat floured surface and knead it until it is smooth (add more water or flour only if absolutely necessary!)
3. When the dough doesn't stick to your hands or the surface any longer, roll it into a ball and place it in a bowl covered with plastic wrap
4. Let the dough rest for 20 minutes
5. Repeat steps 1-4 at least 3 times
6. Shape the noodles
Shape the ball of dough into a long disc and cut 4-6 equal parts (long)
Run each part through a pasta machine OR roll out into long rectagular sheet
with a knife, cut out strips of noodles
pick up the strip at either end and pull it until it is about 3 feet long and whack it lightly on the board
once noodles are thin enough, dust with flour and hang or lay on a drying rack or sheet
7. Start a pot of boiling water and when water is boiling add noodles to cook-- cook until tender (depends on the length and width of your noodles but keep tasting)
8. Once noodles are cooked, strain the water out and divide noodles into eating bowls
9. Pour oil into a small pan and set it over high heat until it starts to simmer, then take it off the heat
10. Add equal amounts of chillies, sesame seeds, green onions, black vinegar and soy sauce
11. Pour the hot oil over each bowl of noodles and serve immediately
12. Serve! Toss noodles as you eat! (you can offer more vinegar, chillies and soy sauce on the side who like their noodles tarter, saltier or spicier!)
