Delicious Vegetarian Ramen

Fun Fact: I don't like the taste or texture of egg yolks which is why the picture is photographed with a hard boiled egg... after the picture was taken I emptied the yolk... don't judge me.

Mise En Place:
​
1 white onion OR 3 shallots
1 cup mushrooms (of your choice! I usually choose oyster, cremini)
2 tbsp sesame oil
1/2 cup tahini
1/2 cup miso paste
8 cups water OR mushroom/vegetable broth
Chilli paste or gochujang
Ramen style Noodles (H-Mart has lots of variety!)
2 Soft boiled eggs (runny yolk)
Avocado slices
Scallions
Togarashi
Cilantro
Spinach or dry seaweed sheets

How To Make:
​
1. Sautee sliced onions or shallots and mushrooms in a large pot with sesame oil until tender
2. Add tahini and miso paste
3. Add water or broth
4. Simmer for 5-7 minutes
5. Add chili paste or gochujang
6. Add boiled ramen noodles
7. Top with 2 eggs on the side, greens(avocado, spinach or seaweed, cilantro, scallions) and togarashi spice
8. Serve and enjoy!
