Delicious Vegetarian Ramen

Fun Fact: I don't like the taste or texture of egg yolks which is why the picture is photographed with a hard boiled egg... after the picture was taken I emptied the yolk... don't judge me.


Serves: 2-3

Time Prep: 5min

Time Cook: 20min

Mise En Place:

​

  • 1 white onion OR 3 shallots

  • 1 cup mushrooms (of your choice! I usually choose oyster, cremini)

  • 2 tbsp sesame oil

  • 1/2 cup tahini

  • 1/2 cup miso paste

  • 8 cups water OR mushroom/vegetable broth

  • Chilli paste or gochujang

  • Ramen style Noodles (H-Mart has lots of variety!)

  • 2 Soft boiled eggs (runny yolk)

  • Avocado slices

  • Scallions

  • Togarashi

  • Cilantro

  • Spinach or dry seaweed sheets

How To Make: 

​

  • 1. Sautee sliced onions or shallots and mushrooms in a large pot with sesame oil until tender

  • 2. Add tahini and miso paste

  • 3. Add water or broth

  • 4. Simmer for 5-7 minutes

  • 5. Add chili paste or gochujang

  • 6. Add boiled ramen noodles

  • 7. Top with 2 eggs on the side, greens(avocado, spinach or seaweed, cilantro, scallions) and togarashi spice

  • 8. Serve and enjoy!
