                   Crispy, Easy and Savory!

Serves: 2-4

Mise En Place: 

​

  • 1 Pound of potatoes (4-5 roughly), shredded (I used a food processor, you can also use a hand grater)

  • 1/2 Cup of finely chopped onion

  • 1 Large Egg, lightly beaten

  • 1/2 tsp salt

  • Breadcrumbs (optional and not used in the pictured latkes above)

  • 1/2 cup of olive oil

  • Sour Cream and Lemon Wedge to top​

How To Make: 

  1. Preheat oven to 250*

  2. Peel and shred potatoes or grate potatoes.

  3. Add potatoes and onions into a bowl of cold water to soak for 1-2 minutes

  4. Potatoes and onions in a strainer to strain out water. Place in a kitchen towel and twist very tightly to strain out as much liquid as possible. Transfer to another dry bowl and stir in egg and salt. You can add your breadcrumbs at this time if you want (this is optional and not present in the photo above)

  5. Heat 1/4 cup of oil in a medium skillet and once it reaches a sizzling temperature, spoon the mixture and flatten into discs on the skillet. Reduce heat a tad and cook until brown on either side. (flip halfway). Use more oil if needed through next batches

  6. Once first batch is complete, place on a paper towel lined plate and season with salt. Continue through batches.

  7. Transfer latkes to a baking sheet and dry in oven for 5-8 minutes. 

  8. Serve with sour cream and squeezed lemon! Enjoy :)
