Mise En Place:

  • 1-2 heads of cauliflower (Chop edges into a square and cut into 2inch thick steaks)

  • 1/2 cup of pistachios, crushed

  • Olive Oil

​

Hummus:

  • 2 cans chickpeas

  • 5 cloves of garlic, whole peeeled

  • 1/3 cup tahini

  • 1 lemon juiced

  • 3/4 tsp salt

  • 3/4 tsp cumin

  • 2 tbsp cold water

  • 1/4 cup olive oil

Chimichurri:

  • 2 cups of parsley leaves and stems

  • 3-4 garlic cloves, whole peeled

  • 1/2 white onion or 1 medium shallot

  • 1/2 tsp fine sea salt

  • 1 tsp crushed red pepper flakes

  • 1/2 cup extra virgin olive oil

  • 1/3 cup red wine vinegar

How To Make: 

​

First, Pre-heat oven to 400*

​

1. Make the Hummus. In a food processor, combine all hummus ingredients and leave the olive oil on the side. Process the ingredients for up to 5 minutes until the consistency is silky smooth. Add more water if necessary throughout if it is too thick. Once it is smooth and thick, remove from food processor into a large bowl and stir in the olive oil. (if you dont have a food processor, try a blender)

2. Make the Chimichurri. Clean out the food processor. Add all chimichurri ingredients , but reserve the olive oil and red wine vinegar on the side. Pulse ingredients in the food processor until all ingredients are finely chopped. Add in the red wine vinegar and olive oil to hand mix. You can also make this by hand! Instead of ingredients whole, pre-chop the ingredients and mince the garlic and stir in with red wine vinegar and olive oil.

3. Make the Steaks! In a large heated skillet on medium heat, add oil. Once oil is hot, add the cauliflower steaks and sizzle on one side until the colour is dark brown. Once you see a dark brown colour, turn it around, salt the steak and sizzle the second side until it looks the same colour. 

Add steaks to an oven sheet lined with parchment paper and roast for 8-10 minutes.

4. Plate! Spread the hummus on the plate, add cauliflower steaks on top. Top the cauliflower steak with a generous amount of chimichurri sauce and sprinkle with crushed pistachios. ENJOY! (you also have the option of adding a sweet component like pomegranate seeds, balsamic drizzle or whatever you want to expieriment with)
